A pick-up is scheduled at noon at Seville train station or airport, from where we head to our basecamp—Dehesa Don Pedro, a stunning private estate set in the Andalusian countryside. After a welcoming lunch and introductions, we hop on the bikes for a first taste of the terrain: a scenic descent to the village of Santa María de Nava along a canyon-like road, then gravel tracks winding between oak groves and cattle farms. We return to the estate as the sun gets low, and settle in for a first dinner under the Andalusian sky.
